    I went for lunch to the newly opened Vietnamese restaurant, Pho # 1 Noodle & Grill, which is located in Ashwaubenon on the West side of Green Bay. As you walk in, the kitchen is directly in front and has an open concept, and to the right is the main dining area. The restaurant is very clean and casual and the décor is done in a simple style. The floors and parts of the walls are done with white tiles. In the middle of the dining room there is a medium sized aquarium with a straw thatched roof, this serves as the focal point of Pho #1 Noodle & Grill. While there are no booths for dining there are plenty of dark wood tables instead.

    My server brought me to my table and gave me a menu, which is quite large. I then inquired about their menu and cuisine and she was very helpful and knowledgeable. I decided to order their specialty, the Beef Noodle Soup Pho the Combo Extra Large for $7.50 which includes all beef cuts of flank, brisket, steak, tripe, and tendon. Every soup includes basil, bean sprouts, a lime wedge and 2 slices of fresh jalapeno pepper. On all the tables are condiments of soy sauce, Hoisin sauce, and Sriracha Hot Chile sauce. My soup came quickly and was served in a huge ceramic bowl; a small side plate was also brought out for the bean sprouts, lime wedge, jalapeno pepper slices and fresh basil. The soup was piping hot. It had minced green onions and chopped parsley attractively floating on top of the beef broth while it was full of tender rice noodles and a good amount of thin slices of beef. The broth was salty, which I feel can be the engine power of flavor when done correctly. Then you crush and add the fresh basil, next the bean sprouts for a crunchy texture against the diverse softness of the noodles and finally you squeeze the lime juice over it and you get the most glorious savory flavor. To even zip it up a bit more you can either add the sweet Hoisin sauce or if you want a little heat add some of the Sriracha Hot Sauce, it’s delicious. Pho # 1 restaurant also offers different stir-fries, grilled sandwiches among other items to choose from.
